Apple Oat Crumble Bars

These apple oat crumble bars are easy to make and will have your whole kitchen smelling amazing! These crumble bars are vegan and perfect for any time of the day. 

Who’s ready for Fall? I am! Don’t get me wrong, Summer is my favorite season and I never want to rush through it, but I do start getting excited for Fall towards the end of August. I like to plan all my Fall recipes and think up all the Fall activities I want to do this year. However, I don’t like to truly start celebrating Fall (i.e. making Fall recipes, apple picking, decorating, etc.) until September.

SO, in honor of September 1st and the unofficial start of the Fall season, I am bringing you my first of MANY Fall recipes of the year. These apple oat crumble bars are loaded with sautéed cinnamon apples, oats and other good for you ingredients. They are great to have with your morning coffee, as a midday snack or as a tasty dessert on their own or with a scoop of ice cream!

I thought it was fitting to kick off Fall recipe season with a sweet treat (everyone’s favorite type of recipe, duh!) made with apples. I live in New York and I must say, our apples in September and October are so sweet, so juicy and just the best apples I’ve ever tasted. Apples are definitely one of my favorite Fall ingredients to cook with as they are in season and so accessible.

OK, back to the apple oat crumble bars. Here is what you’ll need to make them:

  • 8×8 inch baking dish or 8 inch cake pan
  • Large mixing bowl
  • Rubber Spatula
  • Large sauté pan

How to make apple oat crumble bars

The first step to making apple oat crumble bars is to prep the apples. Peel, core and chop apples into small bite sized pieces. Add the apples to a large sauté pan along with cinnamon and coconut sugar and heat over medium heat. Sauté apples for 5-6 minutes, or until they start to get tender.

Next, combine oats, oat flour, almond flour, baking powder, baking soda, cinnamon and salt in a large mixing bowl. If you do not have oat flour, you can easily make some at home by blending rolled oats in a food processor or blender until you have a flour like consistency. Next, add the maple syrup, vanilla, applesauce or mashed banana, coconut oil and almond milk and mix well. Gently fold in the sautéed apples.

Pour batter into a parchment lined baking dish. Smooth out the batter into an even layer with a rubber spatula. Bake bars at 350 degrees for 20-25 minutes, or until a toothpick comes out clean. Allow bars to cool 5-10 minutes before cutting.

Store your apple oat crumble bars in an air tight container in the fridge for up to 5 days or freeze for 1-2 months.

Ingredients

  • 3 apples peeled, cored and small diced
  • 1 tbsp coconut oil
  • 1 tbsp coconut sugar or sweetener of choice
  • 2 tsp cinnamon
  • 2 cups rolled oats gluten free, if needed
  • 1 cup oat flour
  • 1 cup almond flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup applesauce or mashed banana
  • 1/4 cup coconut oil melted
  • 1/3 cup maple syrup
  • 3 tbsp dairy free milk

Instructions

  • Preheat oven to 350 degrees. Combine diced apples, 1 tbsp coconut oil, 1 tbsp sweetener, and 2 tsp cinnamon together in a large sauté pan. Heat over medium heat and sauté apples 5-6 minutes, or until apples start to get soft. Remove from heat and allow to cool.
  • In a large mixing bowl, combine oats, oat flour, almond flour, baking powder, baking soda, salt and 2 tbsp cinnamon and stir to combine. Next, add applesauce or mashed banana, vanilla, maple syrup, 1/4 cup coconut oil and almond milk and mix well. Gently fold in sautéed apples.
  • Add batter to a parchment lined baking dish. Smooth out batter into an even layer. Bake for 20-25 minutes, or until a toothpick comes out clean. Allow to cool 5-10 before cutting. Store in an air tight container in the refrigerator for up to 5 days.
