Pumpkin Cookie Dough Bites

These pumpkin cookie dough bites are an easy, no-bake treat perfect for Fall. Make these to store in your fridge for a quick snack at home or for on the go.

What’s better than edible cookie dough? How about edible PUMPKIN chocolate chip cookie dough in cute, poppable bites?

These pumpkin cookie bites are fun to make and even more fun to eat. They have just a subtle hint of pumpkin and spice to turn your favorite quick snack into something a little more festive for Fall.

I love making cookie dough bites because they are super quick and easy to make and contain just a few ingredients. They are convenient to have in the fridge for a quick treat any time of the day.

These pumpkin cookie dough bites do not require any baking, are vegan and gluten free and have an optional cinnamon sugar coating!

Ingredients

Oat flour: you can use store bought or make your own by blending rolled oats until they reach a flour consistency.
Cashew Butter: we want runny cashew butter for the best consistency. Cashew butter is mild in flavor and yields the best cookie dough flavor.
Pumpkin puree: store bought canned pumpkin (not pie filling) or you can use homemade.
Maple syrup: for natural sweetness and to add moisture.
Vanilla: vanilla is key for that cookie dough flavor.
Spices: cinnamon, pumpkin pie spice and salt to bring out all those yummy flavors.
Chocolate chips: I provide a measurement but feel free to measure with your heart!
Sugar: I loved rolling these cookie dough bites in cinnamon sugar for an extra festive flair. This is optional, but highly recommended.

What You’ll Need

Instructions

In a mixing bowl, combine oat flour, cashew butter, pumpkin puree, maple syrup, vanilla and spices.

Mix until everything is well combined. Fold in the chocolate chips.

Roll dough into one tablespoon sized balls. Use a one tablespoon sized cookie scoop if you have one.

Combine cinnamon and sugar in a small ramekin. Roll cookie dough bites in cinnamon sugar.

Store energy bites in an air tight container in the fridge for 1-2 weeks or in the freezer for up to 3 months.

For best results, roll cookie dough bites in cinnamon sugar right before eating.

Substitutions

Cashew butter: You can sub any nut butter; however, it will alter the flavor slightly and make them more nutty tasting.
Maple syrup: you can sub an equal amount of honey for the maple syrup.
Pumpkin pie spice: sub an equal amount of nutmeg.
Chocolate chips: white chocolate chips would also be delicious!

Ingredients

  • 3/4 cup oat flour
  • 1/4 cup cashew butter
  • 1/4 cup pumpkin puree
  • 1 1/2 tbsp maple syrup
  • 1 tsp cinnamon
  • 3/4 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Cinnamon sugar

  • 1 tbsp sugar
  • 1 tsp cinnamon

Instructions

  • In a mixing bowl, combine cashew butter, pumpkin purée, oat flour, maple syrup, vanilla, salt and spices. Mix well until a dough forms. Fold in chocolate chips.
  • In a small bowl, combine one tablespoon sugar and one teaspoon cinnamon.
  • Roll one tablespoon of dough into a ball and then roll into cinnamon sugar. Repeat until all the dough is used.

    Do you think peanut butter would work in place of the almond butter here? These look yummy!

      Yes! It might give the balls a slight peanut butter flavor, but they will work and I think they would still taste delicious!
