Shrimp Burrito Bowls

These shrimp burrito bowls are loaded with healthy and flavorful ingredients such as juicy seasoned shrimp, simmered black beans, fire roasted corn and rice. They are perfect for lunch or dinner, and a great option for meal prep.

These shrimp burrito bowls feature some of my favorite foods and flavors. Shrimp is one of my favorite protein sources and love how easy meals with shrimp are to make, like this Creamy Coconut Lime Shrimp and these Sweet and Spicy Pineapple Shrimp Skewers.

These shrimp burrito bowls require some prep, but everything is very easy to make. You marinate and cook the shrimp, simmer the black beans, sauté the peppers fajita style and assemble.

The shrimp is marinaded in a flavorful blend of spices and lime juice for an extra kick of flavor. The marinade isn’t spicy, but you could always add a dash or two of cayenne if spice is your jam!

My favorite thing about these shrimp burrito bowls is they are super customizable. You can swap out the beans or the veggies, use guacamole instead of avocado or cauliflower rice instead of regular rice for a lower carb option.

Top off the bowls with your favorite toppings, and you have yourself a filling and healthy dinner for four, or meal prepped lunches for the week!

Ingredients

Shrimp: we’re using shrimp for the main protein source in this recipe. I love the Argentinian kind best.
Rice: any long grain rice will work.
Black beans: the black beans are simmered with garlic and spices until thick and then mashed lightly.
Bell pepper: the bell pepper is sautéed over high heat fajita style. You can also throw in some onions as well.
Corn: I highly recommend fire roasted corn if you can get your hands on it. You can also roast your own corn at home.
Spices: the shrimp is marinated in a variety of spices including garlic powder, chili powder, cumin, smoked paprika, salt and pepper, as well as lime juice.
Avocado: alternatively, you could use guacamole.

Saucepan
Large frying pan
Small mixing bowl
Measuring spoons 
Cutting board and knife

Instructions

In a small bowl, combine the shrimp, lime juice, garlic powder, chili powder, cumin, smoked paprika, salt and pepper. Mix so the shrimp is fully coated in the marinade and allow to marinate while you prepare the beans and peppers.

In a small saucepan, heat one teaspoon of avocado oil over medium heat. Add minced garlic and sauté for one minute.

Add can of black beans as well as cumin and smoked paprika and stir. Cover with lid and bring beans to a gentle simmer.

Allow beans to simmer for 15-20 minutes, stirring occasionally, until beans have thickened. Partially mash beans with a fork or potato masher.

In a large frying pan, heat one tablespoon of avocado oil over medium high heat. Once oil is shimmering, add in sliced bell pepper.

Allow peppers to cook for 2-3 minutes before tossing. Cook peppers until soft and charred, about 5-6 minutes, then remove peppers from the pan.

Turn the heat to medium and add another teaspoon of avocado oil, if needed. Add shrimp and cook for 2 minutes on each side, or until pink and opaque.

To assemble bowls: spoon in cooked rice, shrimp, black beans, fire roasted corn, sautéed bell pepper. Top with avocado and garnish with fresh cilantro and lime wedges.

Tips

  • Remove tails from the shrimp before seasoning and cooking! No one wants to fish around in their burrito bowl to remove the tails while eating.
  • You can mash the beans completely, partially (my preference) or not at all depending on the texture you want.
  • Use convenience items like microwave or instant rice and store bought refried beans to save time with prep.
  • Do not overcook the shrimp, especially if you will be reheating these burrito bowls for meal prep. Cook just until shrimp is pink and opaque.

Prep and cook all components of the burrito bowls, except the avocado. Ingredients can be stored separately or together in meal prep containers.

When ready to eat, heat shrimp burrito bowls in the microwave for 1 minute 20 seconds, or until warmed through. Top bowls with sliced avocado.

Shrimp burrito bowl ingredients can be stored together or separately in air tight containers in the refrigerator for up to 4 days.

How can I roast my own corn?

You can use fresh or frozen corn and either grill the corn (corn on the cob only) or cook in pan over high heat until slightly charred.

Substitutions and Variations

Spices: if you do not have all those spices on hand, you can use a tablespoon or two of taco seasoning.
Black beans: you can use a can of pinto beans in place of black beans if you prefer them.
Fixin’s: the easiest way to customize this shrimp burrito bowl is to mix up the fixins. Lettuce, tomatoes, guacamole, sour cream, cotija cheese or shredded Mexican cheese are just a few optional add ins.
Protein: feel free to switch up the protein for a different take on this bowl. Chicken and tofu are great options.
