Autumn Harvest Salad w/ Quinoa

You'll need spinach, arugula, quinoa, butternut squash, apple, red onion, sliced almonds, pepitas, goat cheese and homemade dressing.
You will need olive oil, apple cider vinegar, maple syrup, dijon musatrd, salt, pepper, dried thyme.
Maple Mustard Vinaigrette
1. Roast the Squash
You can roast the butternut squash in the oven or air fryer.
2. Make the dressing
Combine olive oil, apple cider vinegar, maple syrup, dijon mustard and spices in a mason jar and shake.
3. Assemble salad
Combine all salad ingredients in a large serving bowl, add vinaigrette and toss.
