Lemon Blueberry Energy Bites

These lemon blueberry energy bites are an easy, no-bake treat perfect for springtime. Make these to store in your fridge for a quick snack at home or on the go.

Ingredients

  • 1 cup oats
  • 1/2 cup runny cashew butter
  • 2 tbsp maple syrup
  • 1/2 lemon juiced and zested
  • 1/4 cup dried blueberries

Instructions

  • In a mixing bowl, combine oats, runny cashew butter, maple syrup and the lemon juice and zest. Mix until everything is well combined. Fold in dried blueberries. 
  • Roll dough into one tablespoon sized balls. Use a one tablespoon sized cookie scoop if you have one. Place energy bites on to a plate and refrigerate to set.
  • Store energy bites in an air tight container in the fridge for 1-2 weeks or in the freezer for up to 3 months.
