Ingredients

  • 1 lb ground turkey 85%-93% lean
  • 1 medium sweet potato peeled and diced into 1 inch cubes
  • 1/2 red bell pepper deseeded and chopped
  • 1/2 green bell pepper deseeded and chopped
  • 1/4 onion diced
  • 1 can fire roasted diced tomatoes
  • 6 oz corn
  • 6 oz black beans
  • 2 tsp cumin
  • 2 tsp chipotle chili powder
  • 1 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheddar, Monterey jack or Mexican blend cheese
  • 2 tbsp chopped fresh cilantro for garnish

Instructions

  • Heat avocado oil in a large skillet over medium heat. Add the ground turkey and brown while crumbling meat with a wooden spoon. Remove ground turkey with a slotted spoon and keep the rendered fat in the pan.
  • Add sweet potato, red and green bell pepper and onion to the pan. Cook, stirring frequently, until the sweet potato is tender, about 8-10 minutes.
  • Add the ground turkey, can of fire roasted diced tomatoes, corn, black beans and spices to the pan and mix well.
  • Top with cheese, cover pan with lid and cook for 3-4 minutes over medium low heat, or until cheese has melted. Garnish with fresh cilantro.
