Ricotta Toast (4 Ways)

Ingredients

  • 1 cup whole milk ricotta cheese
  • 4 slices crusty bread such as sourdough

Roasted Tomato Ricotta Toast

  • 12 cherry tomatoes
  • 1 tsp olive oil
  • salt
  • black pepper

Balsamic Strawberry Ricotta Toast

  • 5 strawberries quartered
  • 1 tsp balsamic vinegar
  • 1/2 tsp honey

Honey Pistachio Ricotta Toast

  • 1/2 tsp lemon zest
  • 5 chopped pistachios
  • honey
  • sea salt

Avocado Ricotta Toast

  • 1/4 avocado sliced
  • flaky sea salt

Instructions

  • Roasted Tomato: Add a dozen or so cherry tomatoes to a small baking dish. Drizzle with olive oil, season with salt and pepper and roast at 400°F for 15 minutes, or until blistered and bubbly. Spread 1/4 cup ricotta onto toast and top with roasted tomatoes. Optionally, garnish with some torn fresh basil or a drizzle of balsamic glaze.
  • Balsamic Strawberry: Toss chopped up fresh strawberries with balsamic vinegar and a drizzle of honey. Let them sit for at least 15 minutes to macerate (soften). Spread ricotta onto toast and then top with strawberries. You can also add torn basil or mint for an optional garnish.
  • Pistachio Honey: Spread ricotta onto toast and then top with chopped pistachios, lemon zest and a drizzle of honey. This one is simple but the flavors pair so well together.
  • Avocado Ricotta: Slather a generous amount of ricotta onto toast, then top with slices of ripe avocado. I like to add a sprinkle of sea salt, or red pepper flakes, if you prefer some heat.
