Beautiful and bright springtime pasta dish loaded with seasonal vegetables

Ingredients
12ozpasta
3tbspextra virgin olive oil
4clovesgarlicminced
1/2mediumred onionsliced
2mediumcarrotspeeled and cut into matchsticks
1smallzucchinicut into coins
1smallyellow squashcut into coins
1cupbroccoli florets
1cupeggplantcubed
1bell peppercut into matchsticks
1 cupwhite wine
1lemonjuice and zest
1tbspItalian seasoning
6-8fresh basil leaveschopped
3tbspbutter or ghee
1/2cupreserved pasta cooking liquid
salt and pepperto taste
Instructions
Cook pasta according to package instructions.
Meanwhile, heat olive oil in a large pot over medium heat. Add carrots and cook 3-4 minutes. Add the rest of the vegetables and garlic and cook an additional 3-4 minutes, stirring occasionally. Add white wine, cover pot and steam vegetables for 5 minutes, or until tender with a slight bite.
Add cooked pasta, butter, lemon juice, lemon zest, Italian seasoning, fresh basil, salt and pepper. Toss together so pasta and vegetables are coated in sauce. Add pasta cooking liquid, a little at a time to loosen sauce, if needed.
