Goat Cheese, Bacon and Fig Crostini

Ingredients

  • 1 baguette sliced 1/2" slices
  • 8 oz goat cheese
  • 12 pieces bacon
  • 1 cup fig butter or jam
  • 1 tsp fresh thyme chopped
  • salt and pepper to taste

Instructions

  • Preheat the oven to 400°F and line a large baking sheet with parchment paper. Add 12 pieces of bacon to the pan with space between each piece. Bake bacon for 15-18 minutes, depending on desired crispiness. Allow bacon to cool and then break each piece of bacon in half.
  • To bake the baguette: lower oven to 375°F and line a second baking sheet with parchment paper. Add baguette slices to the baking sheet in a single layer. Spray or brush each piece of baguette with olive oil.  Bake for 10-12 minutes, or until baguette is lightly golden brown and toasty.
  • To air fry the baguette: add baguette to air fryer basket in a single layer. Spray or brush each piece of baguette with olive oil. Air fry at 350°F for 5-7 minutes, or until golden and crispy.
  • Spread a generous amount of goat cheese (approximately 1-2 teaspoons) onto each baguette. Season with salt and pepper. Place a half piece of bacon atop goat cheese. Layer one tablespoon fig butter or jam on top of bacon. Sprinkle crostini with chopped fresh thyme.
