PB&J Reindeer Truffles

Ingredients

  • 2 tbsp vegan butter softened
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 3/4 cup almond flour
  • 1/2 tsp vanilla
  • 1/2 cup jelly store bought or homemade
  • 6 oz dark chocolate
  • 1/2 tsp coconut oil
  • candy eyes
  • mini red M&Ms or red hots
  • thin pretzels

Instructions

  • In a mixing bowl, combine butter, peanut butter, maple syrup, vanilla and almond flour until a smooth dough forms. Chill dough for 20-30 minutes.
  • To assemble truffles, take a heaping tablespoon of dough and roll into a ball. Flatten out the ball and form into a bowl shape. Repeat with another heaping tablespoon of dough. Take 1-2 teaspoons of jelly and place in the center of one of the ‘bowls’. Take the other dough ‘bowl’ and place upside down over the other to cover the jelly. Pinch the sides of dough together to seal in the jelly and then gently shape into a flat circle (it should look like a hamburger patty). You should get 8-10 truffles.
  • Combine dark chocolate and coconut oil in a bowl and microwave in 30 second intervals until melted, stirring between intervals. Use a fork to dunk truffles into chocolate. Coat all sides of the truffle in chocolate and allow excess chocolate to drip off. Place truffles on a parchment lined baking sheet.
  • Immediately add candy eyes, M&M or red hot for the nose and gently press pretzels pieces into the top of the truffle for the antlers. To make the antlers, break pretzel in half. You can add it like this or also remove the inner loop part so it looks more like the tines of antlers. Place truffles in the freezer to harden for 30 minutes.
