Chocolate Covered Strawberry Baked Oatmeal

- 1/2 mashed banana
- 1/2 cup rolled oats
- 1/2 cup milk
- 1 scoop chocolate protein powder
- 2 tsp cocoa powder
- 1 tsp baking powder
- 1 tsp maple syrup
- 1 tsp vanilla
- small pinch sea salt
- 2 tbsp dark chocolate chips
- 2 fresh strawberries chopped
- Chocolate covered strawberry
- 1 whole fresh strawberry
- 1/4 cup dark chocolate chips
- valentine's sprinkles (optional)
Preheat oven to 400 degrees. In one mixing bowl, combine oatmeal ingredients. Allow oats to rest for 10 minutes.
To make strawberry hearts, cut off the stem and leaves of one strawberry in a 'V' shape. Stand strawberry up, cut side down. Thinly slice strawberry with a sharp knife.
Add 1/4 cup chocolate chips to small ramekin. Microwave in 30 second intervals until melted. Dunk strawberry into chocolate, allow excess chocolate to drip off and place on a piece of wax paper to harden. Add sprinkles before chocolate hardens.
Pour oatmeal mixture into a greased baking dish. Top with strawberry hearts. Bake oatmeal at 400 degrees for 30-32 minutes. Allow baked oatmeal to cool for 5 minutes before topping with chocolate covered strawberry. Enjoy!
