Chocolate Covered Strawberry Baked Oatmeal

This chocolate covered strawberry baked oatmeal makes for a special Valentine's Day breakfast for children and adults alike. It has the perfect blend of chocolate and strawberries and is topped with a decadent chocolate covered strawberry.

Ingredients

  • 1/2 mashed banana
  • 1/2 cup rolled oats
  • 1/2 cup milk
  • 1 scoop chocolate protein powder
  • 2 tsp cocoa powder
  • 1 tsp baking powder
  • 1 tsp maple syrup
  • 1 tsp vanilla
  • small pinch sea salt
  • 2 tbsp dark chocolate chips
  • 2 fresh strawberries chopped
  • Chocolate covered strawberry
  • 1 whole fresh strawberry
  • 1/4 cup dark chocolate chips
  • valentine's sprinkles (optional)

Instructions

  • Preheat oven to 400 degrees. In one mixing bowl, combine oatmeal ingredients. Allow oats to rest for 10 minutes.
  • To make strawberry hearts, cut off the stem and leaves of one strawberry in a 'V' shape. Stand strawberry up, cut side down. Thinly slice strawberry with a sharp knife.
  • Add 1/4 cup chocolate chips to small ramekin. Microwave in 30 second intervals until melted. Dunk strawberry into chocolate, allow excess chocolate to drip off and place on a piece of wax paper to harden. Add sprinkles before chocolate hardens.
  • Pour oatmeal mixture into a greased baking dish. Top with strawberry hearts. Bake oatmeal at 400 degrees for 30-32 minutes. Allow baked oatmeal to cool for 5 minutes before topping with chocolate covered strawberry. Enjoy!
