Air Fried Chicken Chimichangas

These air fried chicken chimichangas are a classic Tex-Mex favorite with a healthy twist.

Ingredients

  • 2 chicken breasts
  • 16 oz salsa
  • 2 chipotles in adobo
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1 1/2 cups shredded cheese cheddar or mexican blend
  • 4 oz green chilies
  • 6 large tortillas
  • cilantro avocado crema for serving

Instructions

  • Combine chicken breasts, jar of salsa, chipotles and spices in a slow cooker. Set to low for 6-8 hours or high for 4-6 hours. Remove the chicken from the slow cooker, let cool for 5 minutes, then shred with two forks.
  • In a large bowl, mix together the shredded chicken, 1/2 cup salsa from the slow cooker, shredded cheese and green chilies.
  • Place about 1/2 cup of the chicken mixture in a rectangle close to one edge of the tortilla. Fold the closest edge over the mixture, then fold in the two sides and roll up.
  • Place chimichangas seam side down in the air fryer basket. Spray with oil and air fry at 425 for 7-8 minutes, flipping halfway through.
