These air fried chicken chimichangas are a classic Tex-Mex favorite with a healthy twist.

Ingredients
2chicken breasts
16 ozsalsa
2chipotles in adobo
1tspchili powder
1/2tsppaprika
1/2tspgarlic powder
1/2tsponion powder
1/2tspcumin
1 1/2cupsshredded cheesecheddar or mexican blend
4ozgreen chilies
6large tortillas

Instructions
Combine chicken breasts, jar of salsa, chipotles and spices in a slow cooker. Set to low for 6-8 hours or high for 4-6 hours. Remove the chicken from the slow cooker, let cool for 5 minutes, then shred with two forks.
In a large bowl, mix together the shredded chicken, 1/2 cup salsa from the slow cooker, shredded cheese and green chilies.
Place about 1/2 cup of the chicken mixture in a rectangle close to one edge of the tortilla. Fold the closest edge over the mixture, then fold in the two sides and roll up.
Place chimichangas seam side down in the air fryer basket. Spray with oil and air fry at 425 for 7-8 minutes, flipping halfway through.
