Italian Grinder Pasta Salad

This Italian grinder pasta salad is loaded with deli meats, provolone, fresh veggies, and a creamy tangy dressing. Perfect for BBQs and meal prep!

Ingredients

  • 1 lb short grain pasta
  • 1/3 cup diced ham
  • 1/3 cup chopped salami
  • 1/3 cup chopped pepperoni
  • 1/2 cup diced provolone cheese
  • 1/2 cup sliced pepperoncinis
  • 1/4 red onion very thinly sliced
  • 8 oz cherry tomatoes sliced in half

Dressing

  • 3/4 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 1 tbsp pepperoncini juice
  • 1 tbsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions

  • Add all the dressing ingredients to a small bowl and whisk to combine. Taste & adjust seasoning, as needed.
    3/4 cup mayonnaise, 1/4 cup red wine vinegar, 1 tbsp pepperoncini juice, 1 tbsp dried oregano, 1/2 tsp black pepper, 1/2 tsp salt
  • Cook pasta in heavily salted water until al dente. Strain and rinse the pasta to cool down.

  • In a large mixing bowl, add the pasta, meats, cheese, tomato, onion, pepperoncinis and dressing. Toss well to coat everything in the dressing. Sprinkle pasta salad with more oregano.
