- 5 strips thick cut bacon
- 1 lb Brussels sprouts
- 1/3 cup chopped walnuts
- 2 oz goat cheese crumbled
- 1/4 tsp salt
- 1/4 tsp black pepper
Heat a cast iron skillet or heavy bottom pan over medium low heat. Add bacon and cook for 5-7 minutes, flip and cook an additional 5 minutes, or until crispy.
While the bacon is cooking, prepare the Brussels sprouts by cutting off the stems, removing the tough outer leaves and cutting in half lengthwise.
Remove the bacon and drain on a paper towel lined plate. Drain all but 2 tablespoons of bacon grease.
Add the Brussels sprouts to the pan, ensure most are cut side down and cook undisturbed for 5-7 minutes, toss and cook for an additional 5 minutes.
Add the walnuts, salt and pepper to the pan, toss and cook for an additional 2-3 minutes, or until the walnuts have toasted.
Turn off the heat and add the maple syrup and crumbled bacon. Quickly toss to coat the Brussels sprouts.
Transfer everything to a serving dish and top with crumbled goat cheese. Serve immediately.
