Ingredients

  • 1 tbsp olive oil
  • 6 cups fresh corn approx. 6-7 ears of corn
  • 1/2 cup minced red onion
  • 1/2 cup cilantro chopped
  • 2 avocados diced
  • 1/2 cup crumbled cotija cheese
  • 1/2 cup plain Greek yogurt
  • 2 limes juiced
  • 2 tbsp mayonnaise
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions

  • Remove corn from cob. Heat 1 tbsp olive oil in a large pan over medium high heat. Add corn and cook until charred, about 8-10 minutes, stirring occasionally.
  • Combine charred corn and remaining ingredients in a large mixing bowl. Gently toss to combine.
  • Serve room temperature with tortilla chips.
