- 1 tbsp olive oil
- 6 cups fresh corn approx. 6-7 ears of corn
- 1/2 cup minced red onion
- 1/2 cup cilantro chopped
- 2 avocados diced
- 1/2 cup crumbled cotija cheese
- 1/2 cup plain Greek yogurt
- 2 limes juiced
- 2 tbsp mayonnaise
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
Remove corn from cob. Heat 1 tbsp olive oil in a large pan over medium high heat. Add corn and cook until charred, about 8-10 minutes, stirring occasionally.
Combine charred corn and remaining ingredients in a large mixing bowl. Gently toss to combine.
Serve room temperature with tortilla chips.
