Roasted Honeynut Squash
This roasted honeynut squash recipe, made with cinnamon, butter and maple, is the perfect fall side dish and a great way to try out a new type of squash.

- 2 honeynut squash
- 2 tbsp butter
- 4 tbsp maple syrup
- 1/4 tsp cinnamon
- 1/4 tsp salt
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Cut honeynut squash in half lengthwise and scoop out the seeds with a spoon. Place the honeynut squash halves cut side up on the parchment lined baking sheet.
Pour one tablespoon of the maple syrup into the cavity of each squash half. Place 1/2 tablespoon of butter in the cavity as well. Season squash halves with salt and sprinkle with a little cinnamon.
Roast the squash for 30 minutes, or until tender. Allow squash to cool for 5 minutes before mashing squash with maple syrup and melted butter.
