Ingredients

  • 1 tbsp olive oil
  • 2 medium sweet onions thinly sliced
  • 16 oz pizza dough
  • 4 oz fig jam
  • 12 oz low-moisture mozzarella cheese shredded
  • 2 oz prosicutto
  • 1 cup arugula

Instructions

  • Heat a drizzle of olive oil in a skillet over medium-low heat. Add the thinly sliced onions and cook slowly for about 30-35 minutes, stirring occasionally, until they're soft, golden brown, and caramelized. If they begin to brown too quickly, lower the heat.

  • Heat your oven to 500°F or as hot as your oven safely allows. If using a pizza stone or steel, place it in the oven while it preheats.
  • Let the dough sit at room temperature for about 30 minutes before stretching. On a lightly floured surface, gently stretch it into a roughly 12-inch circle. Brush the dough with oil and transfer to a pizza pan or directly onto the pizza stone. Par bake the dough for 5 minutes.

  • Take the crust out of the oven and spread the fig jam over the top. Top with shredded mozzarella and caramelized onions. Slide the pizza directly onto the stone and cook for 8-10 minutes, or until the crust is golden and crisp and the cheese is melted and bubbling. Cooking time will vary depending on your oven and the thickness of the crust.
