- 4 small chicken breasts about 12 ounces each
- 8 oz cream cheese softened
- 2 jalapeños deseeded and chopped
- 6 strips bacon
- 4 oz cheddar cheese cubed or shredded
- 1/4 cup breadcrumbs
- 1/2 cup panko breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Preheat the oven to 425°F and line a baking sheet with parchment paper.
Butterfly the chicken breasts, lay them flat and season each side with salt & pepper. In a small mixing bowl, add softened cream cheese, bacon, jalapeño and cheddar cheese. Mix to combine.
Divide the filling into four and place 1/4 of the filling on half of each chicken breast. Fold over the other half of each chicken breast.
Combine breadcrumbs and season with garlic powder, onion powder, salt and pepper. Roll the outside of the chicken in breadcrumbs. Place chicken on baking sheet and spray with oil spray.
Bake the chicken at 425°F for 30-35 minutes, until the chicken reaches an internal temperature of 165°F.
