Jalapeño Popper Stuffed Chicken

Ingredients

  • 4 small chicken breasts about 12 ounces each
  • 8 oz cream cheese softened
  • 2 jalapeños deseeded and chopped
  • 6 strips bacon
  • 4 oz cheddar cheese cubed or shredded
  • 1/4 cup breadcrumbs
  • 1/2 cup panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Butterfly the chicken breasts, lay them flat and season each side with salt & pepper. In a small mixing bowl, add softened cream cheese, bacon, jalapeño and cheddar cheese. Mix to combine.
  • Divide the filling into four and place 1/4 of the filling on half of each chicken breast. Fold over the other half of each chicken breast.
  • Combine breadcrumbs and season with garlic powder, onion powder, salt and pepper. Roll the outside of the chicken in breadcrumbs. Place chicken on baking sheet and spray with oil spray.
  • Bake the chicken at 425°F for 30-35 minutes, until the chicken reaches an internal temperature of 165°F.
