Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Butterfly the chicken breasts, lay them flat and season each side with salt & pepper.
  3. In a small mixing bowl, add softened cream cheese, bacon, jalapeƱo and cheddar cheese. Mix to combine.
  4. Divide the filling into four and place 1/4 of the filling on half of each chicken breast. Fold over the other half of each chicken breast.
  5. Combine breadcrumbs and season with garlic powder, onion powder, salt and pepper. Roll the outside of the chicken in breadcrumbs. Place chicken on baking sheet and spray with oil spray.
  6. Bake the chicken at 425°F for 30-35 minutes, until the chicken reaches an internal temperature of 165°F.

Tips

  • Soften the cream cheese first: Room-temperature cream cheese mixes more smoothly and makes stuffing the chicken much easier.
  • Adjust the spice: Remove the seeds and membranes from the jalapeƱos for milder heat, or leave some in if you prefer a spicier kick.
  • To reheat: Reheat leftovers in a 350°F oven, covered loosely with foil, for 15–20 minutes or until warmed through. For quicker reheating, microwave in short intervals, covering the chicken to help retain moisture.

Substitutions

Cream cheese: use neufchatel for a lower fat option.
Bacon: turkey bacon would also be good here.
Cheddar cheese: gouda, fontina or pepper jack would also be delicious.
Breadcrumbs: if you don’t have both, one or the other is just fine.
