Ingredients
Chicken breast: will be pounded out to help tenderize it and allow for even cooking.
Spices: the spices in this recipe are super simple pantry staples including salt, pepper, dried basil and oregano.
Tomato: I like the tomatoes that are sold still on the vine best for this recipe.
Fresh mozzarella: it is important to buy fresh mozzarella (rather than the kind you can grate).
Fresh basil: we’ll top the chicken with basil after air frying. Otherwise, the basil will turn black.
Balsamic glaze: I love the sweet and tangy flavor that balsamic glaze adds to this recipe. Plus, it’s a pretty garnish.

Air fryer
Cutting board and knife
Meat mallet

Instructions
Trim any excess fat off chicken breasts. Lay them on a cutting board and cover them with a piece of plastic wrap.
Use a meat mallet to pound out the chicken breast into an even thickness throughout. Remove plastic wrap and season both sides of the chicken breasts generously with salt, black pepper, dried basil and oregano.
Place chicken breasts in air fryer basket. Spray chicken with olive oil spray.
Air fry chicken breasts at 425°F for 10 minutes. Remove chicken from air fryer and place on clean cutting board.
Layer tomato slices and mozzarella slices on top of chicken breast until there is no more room. Place the chicken back in the air fryer basket.
Air fry chicken for another 2-3 minutes, or until the cheese has melted and the internal temperature of the chicken reaches 165°F.
Remove chicken from air fryer and top with fresh basil leaves, salt and pepper to taste and a drizzle of balsamic glaze.
