Ingredients

Watermelon Juice: freshly blended watermelon juice creates the best flavor. I highly recommend straining the juice for a smoother mouthfeel.
White Rum: a light rum works best for a classic mojito flavor that keeps the drink crisp and refreshing.
Limes: the limes are muddled to release the juice and essence. Limes slices are also used for garnish.
Mint Leaves: Fresh mint adds the signature mojito flavor. Gently muddling releases the oils without making the mint bitter. Also use a sprig of mint for garnish.
Simple Syrup: Adds just enough sweetness to tie everything together.
Club Soda: A splash of club soda can be added for a little fizz and a lighter finish.

Instructions
- Blend 1 cup fresh watermelon cubes in a blender until smooth. Strain through a fine mesh sieve to remove the pulp.
- To a glass, add the lime wedges and muddle to release the lime juice. Add mint leaves and gently muddle a few times to release a minty aroma.
- Add 1.5 ounces rum, 1.5 ounces of watermelon juice, and .5 ounces simple syrup. Stir to combine, then fill the glass with ice and stir a few more times.
- Top with club soda and garnish with lime slices, fresh watermelon and mint sprigs before serving immediately.
Tips
- How to pick out a sweet watermelon: look for a deep yellow ground spot, brown stem and a small “belly button” on the opposite end.
- Avoid over-muddling the mint to prevent bitterness.
- For a frozen version, blend the ingredients with ice until smooth.
- Freeze watermelon cubes to keep the cocktail cold without watering it down.
- Mocktail version: simply leave out the rum and top with extra club soda or sparkling water.
