Ingredients

  • 14 oz white beans drained
  • 4 garlic cloves
  • 2 tbsp extra virgin olive oil
  • 1/2 lemon zested and juiced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh chopped parsley for garnish

For Serving

Instructions

  • Prepare the roasted garlic: wrap garlic cloves in foil with a drizzle of olive oil. Bake at 400°F for 30–35 minutes, or until soft and golden.

  • Blend the dip: In a food processor, combine the drained white beans, roasted garlic, olive oil, lemon juice, salt, and pepper. Blend until creamy and smooth. Adjust salt, pepper, or lemon juice to your preference.

  • Serve: Transfer to a serving bowl, drizzle with olive oil, and garnish with parsley. Serve with your favorite dippers, such as veggies, crackers and toasted baguette slices.
