As soon as the weather starts to get nice, I crave fresh, vibrant flavors and this white bean dip delivers exactly that. It’s light yet creamy, bright from lemon juice, and infused with tender, sweet roasted garlic.

This white bean dip is a beautiful addition to any spring spread, whether you’re hosting a brunch, backyard gathering, or holiday celebration. Its smooth texture and herby finish feels elevated, but the ingredient list stays simple and approachable. Plus, it’s naturally plant-based, and high in fiber and protein.

Serve this white bean dip with warm pita, crusty bread, or crisp vegetables like cucumbers, carrots, and bell peppers. It also pairs well with crackers, crostini, or even as a spread on sandwiches and wraps.

White beans: use cannellini, great northern beans or navy beans for the best texture.
Garlic: the garlic is roasted until soft, sweet and aromatic.
Lemon: the juice and zest is used to brighten up the dip.
Olive oil: use good quality extra virgin olive oil.
Parsley: fresh parsley to garnish
Salt and pepper

Instructions

Prepare the roasted garlic: wrap garlic cloves in foil with a drizzle of olive oil. Bake at 400°F for 30–35 minutes, or until soft and golden.
Blend the dip: In a food processor, combine the drained white beans, roasted garlic, olive oil, lemon juice, salt, and pepper. Blend until creamy and smooth. Adjust salt, pepper, or lemon juice to your preference.
Serve: Transfer to a serving bowl, drizzle with olive oil, and garnish with parsley. Serve with your favorite dippers, such as veggies, crackers and toasted baguette slices.

Substitutions

White beans: easily swap in great northern beans or navy beans for a virtually identical result.
Parsley: use basil, chives, or dill for a different herb profile.
Lemon juice: substitute with red wine vinegar for a slightly sharper tang.
Roasted garlic: if short on time, use a small amount of fresh garlic (start with ½ clove).

    Nice recipe — I liked how simple the ingredient list is. Quick question: for a make-ahead option, how long would the dip keep in the fridge without losing texture or flavor? Also, any tips for reheating or reviving it if it seems a bit dry the next day?
