Ingredients

Asparagus: 3-5 stalks of trimmed asparagus are wrapped in a piece of prosciutto.
Prosciutto: speck, pancetta or Serrano ham would also work.
Olive oil: since this recipe is very simple with minimal ingredients, use a good quality olive oil.
Salt and pepper: to lightly season the asparagus. Because prosciutto and parmesan are salty, only a sprinkle of salt is needed.
Parmesan: to sprinkle over the top of the asparagus once it’s out of the oven.

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Prep the asparagus by snapping or trimming off the woody ends. Drizzle lightly with olive oil and sprinkle with salt and black pepper.
- Wrap a piece of prosciutto around 3–4 spears of asparagus. Repeat with remaining asparagus and arrange on the baking sheet in a single layer.
- Roast the asparagus for 12–15 minutes, or until the asparagus is tender and the prosciutto is slightly crispy.
- Plate and finish with a sprinkle of parmesan. Serve warm.
Tips
Choose the right asparagus: Medium-thick spears work best—they hold up well during roasting and won’t overcook before the prosciutto crisps.
Adjust the amount of asparagus: if needed, for smaller asparagus, use 5 asparagus per bundle. For thicker asparagus, use 3 asparagus per bundle.
Don’t overcrowd the pan: Give each bundle a little space so everything roasts instead of steams. Adjust cook time as needed: Thinner asparagus may cook faster, while thicker spears may need an extra couple of minutes.
Try variations: Add a light drizzle of balsamic glaze after roasting or tuck a thin slice of gruyere or fontina inside the prosciutto for a cheesy twist.
