Transform your Thanksgiving leftovers into this unique Thanksgiving pizza that’s loaded with turkey, mashed potatoes, stuffing and cranberry sauce all on a crispy golden crust.

The Friday after Thanksgiving is for relaxing, putting up Christmas decorations, maybe doing some Black Friday shopping and figuring out what to do with all those Thanksgiving leftovers. If you love the leftover turkey sandwiches the day after Thanksgiving, then this Thanksgiving pizza is for you!
I LOVE the leftover Thanksgiving sandwiches, but I wanted to switch it up this year. This Thanksgiving pizza recipe features store bought pizza dough, gravy as the sauce and is topped with all your favorite Thanksgiving foods like turkey, stuffing and mashed potatoes.
I use brie for the cheese because I like how it adds a creamy element and it also compliments the turkey, gravy and sweet cranberry sauce. Crispy sage is the pièce de résistance that adds beautiful color and so much flavor.
This recipe was designed to use up Thanksgiving leftovers, so it assumes you have all the ingredients prepped and ready to go.
Ingredients
Pizza dough: use your favorite brand of store bought pizza dough. I used Portland Pie Dough.
Gravy: the gravy is used in place of pizza sauce. I also like to serve the pizza with a small bowl of warm gravy for dipping.
Turkey: the turkey is added next so it doesn’t dry out in the oven.
Stuffing: this recipe tends to work best with a traditional stuffing without sausage.
Mashed potatoes: mash potatoes can dry up a little in the oven so I like to add an extra splash of milk to mine before adding to the pizza.
Brie: I love how the creamy brie compliments the turkey and cranberry sauce.
Cranberry sauce: one of my favorite components of leftover turkey sandwiches, so I had to include it here. I love the touch of tangy sweetness it adds.
Fresh sage: the sage is crisped up in butter on the stove and adds great color and flavor to the pizza.

Instructions
Preheat the oven to 450°F and dust a pizza pan with a mixture of flour and cornmeal (or just flour).
Dust your hands and pizza dough with flour and begin shaping the dough into a circle with your hands.
Lay the pizza dough down on the pizza pan. Stretch and press the pizza dough to the shape of the pan, being careful to stretch the dough to an even thickness.
Drizzle the dough with olive oil and par bake the dough for 8-10 minutes.
While the dough is par baking, melt butter in a small frying pan over medium heat. Add the sage leaves and allow them to crisp up, about 4-5 minutes. Remove sage from pan and drain on a paper towel.
Add gravy to the crust and spread into a thin even layer. Top with turkey, chunks of brie and dollops of mashed potatoes and stuffing.
Place the pizza back into the oven for an additional 8-10 minutes, or until the brie has melted and the crust is golden brown.
Remove pizza from the oven and top with dollops of cranberry sauce and the crispy sage leaves. Cut the pizza into 8 slices.
Tips
- Take the dough out of the fridge and rest at room temperature for at least 30 minutes before you begin to shape the dough.
- Be careful not to use too much gravy or it could make the crust soggy.
- Ensure you use enough toppings so there is a bite of each topping on each slice.
- If you have a pizza stone, I highly recommend using it! Par bake the dough on a pizza pan and then transfer the pizza to a preheated pizza stone after the toppings have been added.
- Serve the pizza with a bowl of warm gravy for dipping.

Allow the pizza to cool to room temperature, then wrap in plastic wrap and store in a resealable plastic bag in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Preheat the oven to 425°F. Place frozen or refrigerated pizza slices on a baking sheet or directly onto a pizza stone.
Bake pizza for 10 minutes, or until heated through.
Substitutions
Pizza dough: to speed things up even more you could use a store bought pizza crust or flatbread.
Brie: I personally love brie in this recipe because it adds a creaminess and compliments the other flavors well. However, you can use any other cheese you prefer such as cheddar, gouda or mozzarella.
