Buffalo Chicken Egg Rolls

Buffalo chicken egg rolls are an incredibly delicious and easy party appetizer! They consist of shredded chicken, buffalo sauce, two types of cheeses, greek yogurt and are crisped to perfection in the air fryer or oven!

The super bowl is coming up, so of course it’s time to start thinking about appetizers! To be honest, the food is my favorite part of the super bowl. Anyone else?
These buffalo chicken egg rolls are a must make for this year’s super bowl. It is essentially buffalo chicken dip (everyone’s favorite) stuffed into egg roll wrappers and then baked or air fried.
This means they are super easy and a crowd favorite. Not super bowl time? These buffalo chicken egg rolls are great for any party, game day or other gathering.
You can make these buffalo chicken egg rolls as spicy or as mild as you like by using your favorite hot sauce. I prefer Frank’s mild Buffalo sauce. Serve with celery, carrots and either blue cheese or Ranch (or both). Which team are you?
Ingredients
- Egg Roll Wrappers: what we’ll be rolling our buffalo chicken mixture in.
- Chicken: We’ll be using cooked and shredded chicken. You can use leftover chicken or prepare this in advance.
- Plain Greek yogurt: I like to use Greek yogurt for less fat and more protein.
- Hot sauce: Use your favorite brand and spice level.
- Cheddar cheese: Sharp cheddar cheese stands out in flavor amongst the hot sauce and blue cheese.
- Blue cheese: compliments the hot sauce and adds great flavor (see below for subs if you don’t like blue cheese)
- Garlic powder: for extra flavor
Optional Add ins
- Scallions: Adds a nice brightness and slight crunch to the egg rolls.
- Ranch seasoning: can add some additional flavor.
- Shredded carrots: if you want to beef up the mixture and add some vegetable.
What You’ll Need
- Mixing bowl and spoon
- Measuring cups and spoons
- Plate or cutting board
- Baking sheet with wire rack (if using baking method)
- Small ramekin filled with water
Instructions
In a mixing bowl, combine cooked and shredded chicken, plain Greek yogurt, hot sauce, cheddar cheese, blue cheese and garlic powder. Mix until everything is well combined.
Take one egg roll wrapper and place on the work surface in front of you so one corner is pointed towards you (so it looks like a diamond). Add 1/3 cup of the buffalo chicken mixture to the center of the egg roll wrapper.
Wet your finger with a bit of water and dab each corner of the egg roll wrapper. Fold the corner facing you up over the filling.
Fold in the two sides over the mixture, then roll away from you to roll up the egg roll.
Place egg roll wrappers seam side down in air frier basket or on baking sheet with wire rack.
Brush or spray egg rolls with oil and cook according to the instructions below.
To air fry: Air fry egg rolls at 350 degrees for 15 minutes, flipping halfway through. Be sure to watch carefully as each air fryer is different and the egg rolls can go from perfectly crispy to burnt quickly!
To bake: Preheat oven to 425 degrees. Bake for 25-30 minutes, flipping egg rolls halfway through to ensure both sides get crispy.
FAQ
Where can I buy egg roll wrappers?
Egg roll wrappers can be purchased at Wal-Mart or at an Asian market. They are often refrigerated and located with the produce.
Can I use wonton wrappers instead of egg roll wrappers?
Yes. Wonton wrappers are made from the same dough, but they are just smaller in size. Use 2-3 tablespoons of filling if you are using wonton wrappers. They are NOT the same as spring roll wrappers.
Are buffalo chicken egg rolls spicy?
They are as spicy as the buffalo sauce you use. You can purchase mild buffalo sauce for mild heat or hot buffalo sauce for an extra kick.
Which cooking method is better?Â
If you have an air fryer, go with that method instead. They will cook faster and crisp up more than the baking method.
Can I freeze buffalo chicken egg rolls?Â
Yes, they freeze great! Assemble egg rolls but do not cook. Freeze them on a tray and then seal in an air tight container or freezer bag for up to 3 months. When ready to eat, add right to air fryer frozen and cook at 375 for 15-18 minutes, flipping halfway through.
Substitutions
- Chicken: Shredded rotisserie chicken also works great in this recipe.
- Plain Greek yogurt: use 1/2 cup sour cream or cream cheese in place of the Greek yogurt.
- Blue cheese: if you are not a fan of blue cheese, you can omit and additional cheddar cheese, if desired. For an alternative flavor, add 2 tablespoons of ranch dressing.
- Cheddar cheese: Mozzarella cheese also works great in this recipe.
