Reuben Sliders

A spin on a classic Reuben sandwich, these Reuben sliders are the perfect game day appetizer to make for a crowd.

Reubens are one of my favorite sandwiches to order out at restaurants. The combination of corned beef, Swiss cheese and thousand island dressing that hits the spot every time!

Reuben sliders are a handheld version that is extremely easy to throw together and is sure to be gobbled right up. These Reuben sliders are made on Hawaiian rolls, topped with melted butter for a beautiful gloss and finished with everything bagel seasoning – not traditional – but so delicious!

Reuben sliders are ideal for game day, as a party appetizer or even as an entree on St. Patrick’s Day!

Ingredient Notes

Reuben slider ingredients.
  • Hawaiian rolls: typically found in the bakery section of the grocery store. I like King’s Hawaiian Rolls.
  • Corned Beef: corned beef is available year round at any grocery store deli or specialty meat store.
  • Swiss cheese: opt for a thick cut sliced Swiss.
  • Thousand Island dressing:
  • Sauerkraut: I recommend squeezing some of the excess liquid out of the sauerkraut to prevent the sliders from getting soggy (this also helps make the sauerkraut less pungent).
  • Butter: the tops of the Hawaiian rolls get slathered with melted butter for that glossy finish and so they get golden brown in the oven.
  • Everything bagel seasoning: although not traditional, I love the addition of everything bagel seasoning on top as it gives it even more of that deli sandwich feel.

How to Make Reuben Sliders

Preheat the oven to 400°F. Prepare the sauerkraut by wrapping it in a kitchen towel or paper towels and wringing out the excess liquid.

Use a bread knife to cut the Hawaiian rolls in half. Place the bottom half in a 9×13″ baking dish.

Top the bottom half of the rolls with corned beef, followed by Swiss cheese, then sauerkraut and lastly, the Thousand Island dressing. Add the top half of the rolls.

Brush melted butter over the top of the rolls until fully coated. Sprinkle on the everything bagel seasoning.

Bake sliders covered for 10 minutes, then uncovered for an additional 15 minutes, or until the tops of the buns turn golden brown and the cheese has melted.

Allow sliders to cool for 5 minutes before cutting. Serve warm.

Tips

  • To ensure you are cutting the rolls in half evenly, get eye level with the rolls and keep your knife parallel to your work surface.
  • Avoid adding the dressing directly to the bottom half of the rolls to help prevent them from getting soggy.
  • For best results, assemble right before baking and serve warm.
  • To store: wrap leftover sliders in aluminum foil and store in the fridge for up to 3 days.
  • To reheat: preheat the oven to 400°F, add sliders (wrapped in aluminum foil and bake for 10 minutes, or until heated through. Alternatively, you can air fry the sliders at 350°F for 5-8 minutes, or until heated through.

Ingredient Substitutions

  • Hawaiian rolls: original Hawaiian rolls do have a sweetness to them so if you do not prefer that I recommend the King’s Hawaiian Savory Butter Rolls instead.
  • Corned beef: if you cannot find or do not like corned beef pastrami is a great substitution. You could also go for Rachel sandwich sliders with turkey.
  • Thousand Islands dressing: While there are slight differences between Thousand Island and Russian dressing, they are similar enough that they are interchangeable in this recipe.
