If someone asked me what food I could eat every day for the rest of my life and not get sick of it, the answer would be toast. Avocado toast used to be my favorite way to enjoy toast, but lately I’ve been loving and preferring ricotta toast.

Ricotta is a soft, spreadable cheese that has small curds and a mild, milky flavor. It is used in both savory and sweet applications and can be enjoyed cold or warm.

Ricotta toasts feature some sort of crusty bread, such as sourdough, creamy and delicious ricotta cheese and nearly any other toppings you desire. Today I am going to share my four favorite ricotta toast variations.

I love to enjoy ricotta toast for breakfast, a light lunch or an afternoon snack. It’s very quick and simple to make and they can be very easily customized based on what you like and what you have on hand; let the creative juices flow!

Bread: choose slices of hearty, crusty bread such as French or sourdough.
Ricotta: I recommend a whole milk ricotta for the best flavor and texture.

Ricotta Toast Variations

Avocado Ricotta Toast

Slather a generous amount of ricotta onto toast (about 1/4 cup), then top with slices of ripe avocado. I like to add a sprinkle of sea salt, or red pepper flakes, if you prefer some heat.

Roasted Tomato Ricotta Toast

Add a dozen or so cherry tomatoes to a small baking dish. Drizzle with olive oil, season with salt and pepper and roast at 400°F for 15 minutes, or until blistered and bubbly.

Add ricotta to toast and top with roasted tomatoes. Optionally, garnish with some torn fresh basil and/or a drizzle of balsamic glaze.

Pistachio Honey Ricotta Toast

Spread ricotta onto toast and then top with chopped pistachios, lemon zest and a drizzle of honey. This one is simple but the flavors pair so well together.

Balsamic Strawberry Ricotta Toast

Toss chopped up fresh strawberries with balsamic vinegar and a drizzle of honey. Let them sit for at least 15 minutes to macerate (soften).

Spread ricotta onto toast and then top with strawberries. You can also add torn basil or mint for an optional garnish.

Ways to Switch it Up

  • Whip your ricotta in a food processor until smooth and creamy before spreading onto toast.
  • Top savory ricotta toasts with red pepper flakes for some added heat.
  • Use fresh herbs, such as chives, dill, parsley, basil or mint to add extra flavor.
  • Add chopped nuts or seeds to add some extra crunch.
  • Top avocado toast with a poached or fried egg for protein and satiating power.

FAQ

What type of bread is best for ricotta toast?

My favorite pick is a nice crusty sourdough bread, as the flavor works well with the ricotta and other flavors. However, you can use any crusty bread such as a French loaf, baguette or even ciabatta.

What is the best way to toast the bread?

Toaster/toaster oven/air fryer: set to toast setting or 375°F and toast for 4-5 minutes, or until desired brownness.

In a pan: heat a large pan over medium heat. Drizzle olive oil on bread, place in the pan, and cook for 2-3 minutes on each side, or until golden brown.

On the grill: Heat the grill to medium and grill bread slices 1-2 minutes on each side, or until slightly charred.

Can I turn this into an appetizer?

Yes! My recommendation would be to use a baguette instead of a larger loaf and make crostini. This makes it a more bite sized option, which is more appropriate for an appetizer.

How long is leftover ricotta toast good for?

Once assembled, ricotta toast will only be good in the refrigerator for about 1 day, as the ricotta will start to turn the toast soggy. It’s best to only make what you’ll eat or store all ricotta toast components separately in the fridge until you are ready to assemble.
