Cinnamon Pear Gin Fizz

Let’s add a little seasonal flair to a favorite gin cocktail with this cinnamon pear gin fizz. I love gin fizzes, I love cinnamon and I’ve always found pears to be the most underrated produce of fall, so I thought it was fitting to use all three to make a delicious, cozy fall cocktail.
This cinnamon pear gin fizz features an easy homemade cinnamon pear simple syrup, lemon juice, egg white and your favorite type of gin. I love to add a splash of club soda for just a little bit of fizz and all the fun garnishes including a cinnamon sugar rim, pear slice, anise star and a sprinkle of ground cinnamon.
This cinnamon pear gin fizz is sure to be a hit at any fall gathering or to enjoy during a happy hour in while watching the leaves fall.
Ingredients
Pear: A pear is chopped up and added to the simple syrup to infuse it with flavor. I also like to use a slice of pear for a garnish.
Cinnamon: a cinnamon stick is used to flavor the cinnamon pear simple syrup and ground cinnamon is used in the cinnamon sugar rim and to garnish.
Sugar: regular white sugar is used to make the simple syrup and for the cinnamon sugar rim.
Gin: I used Beefeater gin for this gin fizz.
Egg white: egg white is a classic ingredient in a gin fizz. It does not add any flavor but gives the cocktail a smooth, silky texture and foamy head.
Lemon juice: another classic ingredient in gin fizz. Fresh lemon juice is best.
Club soda: just a splash, to add some bubbles.

Instructions
In a small saucepan set over medium heat, add 1/2 cup sugar, 1/2 cup water, 1 cinnamon stick and 1 chopped pear. Bring to a boil and gently boil for 5 minutes.
Remove the saucepan from the heat and allow the simple syrup to sit for another 5-10 minutes to allow the pear and cinnamon flavor to continue to seep into the syrup. Strain the syrup through a fine mesh strainer into a jar.
On a small plate, combine cinnamon and sugar. Use the lemon to wet the rim of the cocktail glass. Press the rim of the glass into the cinnamon sugar until it sticks to the glass.
To a cocktail shaker without ice, add the gin, lemon juice, egg white and cinnamon pear simple syrup. Cover the cocktail shaker with the lid and shake vigorously for 15-20 seconds.
Remove the lid and add ice. Replace the lid and shake again for 10-15 seconds, or until the outside of the shaker frosts over.
Fill the prepared cocktail glass with ice. Strain cocktail into the glass. Garnish the cocktail with a pear slice and a dash of cinnamon.

Tips
- ย Make the cinnamon pear simple syrup ahead of time and store in the fridge until ready to use.
- Take your eggs out of the fridge 10-15 minutes before you’re ready to make your cocktail to take the chill out of them. The result will be a foamier cocktail!
- Save the egg yolks for baking, making an omelette or carbonara!
- The longer you ‘dry shake’ your cocktail, the foamier your gin fizz will be.
FAQ
Why is raw egg white used in a gin fizz?
Egg white is used for mouthfeel and consistency of the cocktail. Egg white provides a silky, lush mouthfeel and a foamy head. The egg white does not alter the flavor of the drink at all.
Is it safe to drink something with raw egg whites?
Please ensure you are using fresh, unblemished/uncracked egg whites straight from the fridge.
While the likelihood is small, consuming raw egg may increase your risk of food borne illness.
Why is my gin fizz not foamy?
You likely need to shake your cocktail for longer. Ensure you are dry shaking the cocktail before adding ice and shaking again.
You may also be working with old egg whites, or egg whites that are too cold. Both can hinder foaminess.
Substitutions
Egg white: for a vegan substitute, one tablespoon of aquafaba (the liquid from a can of chickpeas) creates a similar texture and foam that egg whites create.
Club soda: seltzer or sparkling water would work too. I sometimes like to use a flavored seltzer, like lemon or pear to add more flavor.
